Instead of copying what you get at the steakhouse, why not add a little Japanese flair with this tasty tempura batter?

Method

Batter

  • Combine egg yolk and ice water in a bowl and mix
  • Sift flour, baking powder, salt and cornflour together
  • Add egg and water mixture and stir briefly. The batter should be rough, only half mixed and not sticky.
  • Whisk the egg white (just before you are ready to use the batter) to soft peaks and gently fold into the batter

Onion rings

  • Slice onions into rounds and separate into rings
  • Mix flour and seasoning and toss in onion rings to coat
  • Heat the oil to about 180˚C
  • Line a tray with absorbent kitchen paper
  • Dip the rings into the batter one by one. Shake to remove any excess batter and then transfer them to the hot oil.
  • Deep-fry in batches for 3-4 minutes until crisp and golden
  • Remove the onion rings and transfer them to the paper-lined tray to drain and keep warm while you cook the rest
  • Serve with your choice of steak or hamburgers
