Method
  • Prepare a fire to a moderate temperature.
  • Place the beef Texan steak on the grill and for 5 – 6 min on both sides, until cooked. Set aside to rest for 10 minutes.
  • Place the pre cooked corn on the grill and allow corn to get colour. Remove the kernels using a knife and place in a bowl.
  • In a serving bowl, combine braaied corn, red onion, parsley, coriander, chilli, cherry tomatoes, red kidney beans, cucumber and wild rocket.
  • Drizzle with olive oil and lemon juice and toss well.
  • Slice beef Texan steak into 1 cm strips and arrange on top of the salad.
  • Season with salt and pepper.

Dietitians Notes:

After draining your kidney beans, rinse them in a colander under running water to remove the excess brine – this will help to lower the sodium content of your meal.
