Thai green battered prawns with ground almonds

Make your own tempura-style prawns using a batter spiked with Thai green curry.

Method
  • Sift ½ cup (125ml) cornflour and ½ cup (125ml) flour in a large bowl. 
  • Whisk 2 Tbsp (15ml) Thai green curry paste and 1 extra-large PnP egg together and fold through dry mixture. 
  • Fold ¾ cup (180ml) beer or soda water through dry ingredients. 
  • Allow to stand for a minute. 
  • Dust prawns with flour, dip into batter and deepfry in vegetable oil until golden.
  • Serve with soy sauce or PnP sweet chilli dipping sauce.
