Method
  • Whisk together 3 Tbsp (45ml) toasted desiccated coconut, 3 Tbsp (45ml) Thai green paste, juice (60ml) of 1 lemon, ½ tsp (3ml) castor sugar and 3 Tbsp (45ml) olive oil.
  • Chargrill 2 packets (250g each) asparagus until just cooked, slice into spears and add a packet of mung bean sprouts, 1/3 cup (80ml) coriander, 6 finely sliced radishes, 1 cup (250ml) peas and 1/3 cup (80ml) pomegranate seeds.
  • Toss with dressing and serve.
