Method
  • Heat a glug of oil in a saucepan and fry onion until soft. Add both pastes and fry for another minute.
  • Add stock and coconut milk and simmer for 10 minutes
  • Add lentils, beans and coconut milk and cook for a further 5 minutes
  • Stir through lime juice and season
  • Serve with coriander
