Thai style salmon fish cakes

Makes 12-14 medium-sized salmon cakes.

Method
  • Toss all salsa ingredients together and set aside for flavours to infuse. 
  • Blend salmon, egg and red curry paste to an almost smooth paste. 
  • Add potatoes, garlic, coriander, fish sauce and lime juice and blend again. Season with salt. 
  • Dust hands with a little flour and shape mixture into 12 flat, round patties (each about 5cm in diameter).
  • Chill for 30 - 60 minutes. 
  • Heat oil in a shallow frying pan. When hot, fry fish cakes for about 3-4 minutes on each side, until golden. 
  • Drain on a kitchen towel and serve hot with salsa.

Chef's tip: These fish cakes may be brushed with egg white and baked in a 200 degrees Celsius oven.
