Method
  • Mix the first seven ingredients together in a bowl. Season and set aside.
  • Heat oil in a large non-stick pan. Fry spoonfuls of mixture for 2-3 minutes on each side until cooked through and golden.
  • Arrange fritters on salad bed
  • Mix yoghurt, sweet chilli sauce, ginger and lime juice
  • Drizzle over fritters and serve


Variations

  • For a richer taste, try adding 300g pork mince to the chicken mince
  • Spice fritters up with chilli and coriander
  • Fill pita breads with fritters, salad and yoghurt dressing
