Method
  • Combine cornflour with a little water to form a paste.
  • Toss chicken in paste to coat.
  • Heat vegetable oil in a wok or saucepan and cook chicken until lightly browned. 
  • Add spring onions and ginger and fry for a minute.
  • Add rice wine, soy sauce and stock and stir well to deglaze the pan. 
  • Bring to the boil, then reduce to a simmer and allow sauce to thicken.
  • Add sesame oil and serve with egg noodles, chopped spring onion and coriander.
