Method
  • Preheat oven to 180°C.
  • Place a roasting pan half-filled with water in bottom of oven.
  • Mix biscuit crumbs, butter and coffee liqueur together.
  • Press into a 20cm loose bottomed cake tin.
  • Combine cream cheese, mascarpone, vanilla and sugar.
  • Add eggs one at a time, mixing well. Add flour and gently mix to incorporate.
  • Pour mixture into cake tin and bake for 40-45 minutes, or until just set.
  • Switch off oven, open door slightly and cool cake in oven (this prevents it from cracking).
  • Dust with cocoa once completely cool.
  • Serve with coffee liqueur and strong filter coffee.
