Method
  • Heat oil in a pan and sauté garlic, ginger, lemongrass and paste for a minute.
  • Add stock and simmer gently for 10 minutes. Cool, then strain.
  • Add strained stock, juice, coriander and lime juice to a blender and blitz until smooth. Refrigerate.
  • Preheat oven to 200°C.
  • Toss prawns in flour and dip in egg white. Coat in coconut and place on a baking tray. Drizzle with oil.
  • Bake for 10 minutes or until crisp and cooked through.
  • Pour soup into small glasses, and add a couple of ice cubes and a splash of vodka. 
  • Serve garnished with coriander and hot, crispy prawns.
