A delicious midweek meal. For a vegetarian option omit the bacon and add olives or mushrooms.

Method
  • Cook pasta according to packet instructions. Drain and set aside.
  • Heat oil in saucepan.
  • Add bacon and fry for about 2 minutes.
  • Add garlic, chilli and tomatoes and fry for another 2 minutes.
  • Add sauce and balsamic vinegar and simmer for 5 minutes. Season and stir through basil.
  • Serve tossed through pasta and scattered with extra basil.


More good ideas:

  • Swap bacon with prawns or smoked chicken rashers.
  • Serve as a wrap  filling or with nachos to scoop.
