Method
  • Preheat oven to 180°C
  • Mix ginger, chilli, chutney, lemon, stock and seasoning together. Toss chicken to coat
  • Place in an ovenproof dish and bake for about 35 minutes
  • Add tomatoes and bake for a further 10 minutes or until cooked through and slightly caramelised
  • Serve scattered with coriander
