Tomato-stuffed peppers with scrambled eggs

This delicious dish is a source of lycopene, an antioxidant which can help support immunity during training.

Method
  • Preheat oven to 200ºC.
  • Place peppers on a baking tray and rub all over with a little oil.
  • Season lightly.
  • Toss cocktail tomatoes, chilli, onion and basil in a bowl.
  • Add a glug of olive oil and balsamic vinegar and toss well, scrunching ingredients together with hands. Season.
  • Divide mixture and juices between pepper ‘cups’.
  • Bake for 15-20 minutes or until peppers are cooked through.
  • Lightly whisk eggs and cook in a non-stick pan until just set but still creamy. Season.
  • Rub hot toast lightly with a garlic clove.
  • Serve with peppers, eggs and rocket.


Tip

  • Replace eggs with ricotta or chunky cottage cheese.
