Method
  • Combine the oil, onion and mint.
  • Baste the chops with the mixture and season with salt and pepper.
  • Prepare an indirect fire on your Weber braai.
  • Place the chicken flattie on the grill and cook for 35 minutes until it starts to go brown.
  • Place the boerewors and chops on the grill. Close the Weber lid and cook for 30 minutes.
  • Remove and allow the meat to rest for 10 minutes.
  • Serve with the savoury porridge and biltong salad.
     

Savoury pap:

  • Make the pap according to the directions. It should be thick but not too thick, you don’t want it to be slappap either.
  • Add the canned corn and the garlic butter and stir together well.
  • Sprinkle the grated cheese on top of the porridge.
  • Put the lid on the pot and place a few coals over the lid to brown the cheese.
     

Tip : You can also add chopped fried bacon, mushrooms and onions to make a meal on its own.

Biltong Salad:

  • Place the dressing ingredients in a screw-top bottle and shake well. Keep in the fridge until needed.
  • Place the biltong and cheese in a bowl and add enough of the dressing to moisten well.
  • Cover and marinate for atleast an hour (or even a day) in the refrigerator.
  • Arrange the lettuce on a large, flat salad dish and arrange the salad ingredients on top.
  • Sprinkle lightly with the dressing .
  • Spoon the marinated biltong mixture on top and serve the remaining dressing separately in a small cup.
