Method

Shell:

  • Pour melted white chocolate into a large (1L) rounded but flexible plastic bowl.
  • Keep swirling bowl while chocolate sets, to ensure an even shell.

Mousse and chocolate filling:

  • Beat egg yolks and vanilla into melted chocolate.
  • Whisk egg whites until fluffy and carefully fold through mousse in two batches. 
  • Stir through brandy.
  • Repeat process with dark chocolate filling, folding coffee in at the end.
  • Layer fillings into white chocolate shell and set completely.
  • Carefully un-mould ‘bomb’ onto a plate and drizzle with lightly melted ganache.
  • Top with fresh berries, cut into wedges using a hot knife, and serve.
