Tzimmes salad

A tzimmes of brisket and sweetened root vegetables is a Jewish New Year staple. This is a lighter, healthier salad version.

Method
  • Preheat oven to 200ºC.
  • Cut vegetables into generous chunks, leaving skins on. 
  • Place in a roasting pan, drizzle with olive oil, sprinkle with salt, pepper and cinnamon, and toss to coat.
  • Bake until tender, then cool.
  • Slice red onion into thin half moons. 
  • Scatter with salt and mellow for about 10 minutes.
  • Add chickpeas, ½ cup (125ml) olive oil, honey, orange juice, cumin and paprika. 
  • Season with black pepper and a little chilli and marinate for 20 minutes.
  • Add roasted vegetables to salad leaves. 
  • Drizzle with vinaigrette of onions and chickpeas.
  • Scatter over cranberries and pumpkin seeds and serve.
