Method
  • Soak beans overnight (or cook for at least 2 hours in boiling water).
  • Combine beans with samp, add to a pot and pour over water. 
  • Boil (without salt) until tender, about 1½ hours.
  • Stir in salt and continue to boil for another 1½ hours.
  • Fry onions in oil until soft, add curry powder and chicken spice and fry for a minute.
  • Add onion mixture to samp mixture and cook gently until soft and mushy. Stir regularly to prevent it from sticking to the bottom of the pot.
  • Serve scattered with chicken spice or Aromat.
