Method
  • Preheat oven to 160°C.
  • Combine dry ingredients (including chocolate chips) in a large mixing bowl.
  • Place remaining ingredients in a pot and heat gently until coconut oil has melted.
  • Add wet mixture to dry ingredients and stir until a soft dough forms.
  • Firm mixture in the fridge, then roll teaspoonfuls into balls and place on a greased baking tray. 
  • Press each ball gently with the back of a fork and bake for 25-30 minutes or until firm to the touch. Cool before serving.

 

Good idea

  • Substitute coconut oil with canola oil, and liquid fructose may be replaced with either honey or agave nectar.
