Vegetable biryani

Fabulously healthy with a great variety of vegetables. Experiment with different vegetables and even add some pulses if you like.

Method
  • Preheat oven to 190°C
  • Cook rice with cardamom and cassia according to packet instructions
  • Drain and set aside
  • Heat oil in a saucepan
  • Add all vegetables except beans
  • Fry vegetables to soften slightly
  • Add half the stock and all the curry paste, chilli, mustard and coriander seeds. Cook over a gentle heat for about 15 minutes. Add beans.
  • Layer rice and vegetables in an ovenproof dish and finish with a layer of rice. Pour over remaining stock and sprinkle over fried onion garnish. Cover pot tightly with foil and a lid and bake for about 45 minutes, or until liquid has been absorbed.
  • Serve with coriander and yoghurt
