Method
  • Place dry ingredients in a mixing bowl.
  • Combine butter and milk and gradually add to dry ingredients.
  • Mix by hand until a dough forms. Knead dough on a floured surface for 8 minutes until dough is smooth and springy.
  • Place in a lightly oiled bowl, cover with clingfilm and proof in a warm part of the house until doubled in size.
  • Lightly knead dough again, then shape into 8 ballsand roll out on a floured surface to 2m thick.
  • Heat oil in a deep pot and deep-fry until golden on both sides.
  • Top with garlic, olive oil, rosemary, thyme and feta. Season to serve.
