Method
  • Soak vermicelli in boiling or hot tap water until soft. Drain well.
  • Place mint, vegetables and noodles in a bowl.
  • Mix rice vinegar, garlic, sesame oil and seasoning together and pour half the mixture over vegetables.
  • Pour the remaining vinegar mixture over the noodles.
  • If you have the time, allow to marinate for about 30 minutes.
  • Moisten rice wrappers in a bowl of warm water, one at a time.
  • Place one wrapper on a flat surface. Arrange a small amount of the marinated ingredients along the side of the wrapper nearest to you. Begin to roll from this end, folding in both the edges after the first roll to cover the filling.
  • Very gently roll up the remaining wrapper and set aside.
  • Repeat until all wrappers and filling have been used up.
  • Cover with a damp dishcloth to keep moist.
  • Slice rolls diagonally in the centre and arrange in a bowl or platter.  Serve as is or with a dipping sauce of soy flavoured with wasabi paste or sweet chilli sauce thinned with a little lemon juice.
