Vine tomatoes, olive and goat's cheese bruschetta

Perfect vegetarian meal rich in lycopene from the tomatoes and monounsaturated fat from the olives and olive oil.

Method
  • Pre-heat the oven to 220ºC
  • Place the tomatoes in a large roasting tin and drizzle with the oil and balsamic vinegar. Sprinkle the garlic and thyme sprigs over the tomatoes.
  • Roast for 15 minutes, until tender. Divide the tomatoes into 4 portions with the vines intact and set aside.
  • Pre-heat the grill to high. Toast the bread slices on both sides until golden.
  • Spread each bread slice with 15ml (1T) of the tapenade
  • Top each slice with some goat's cheese and the tomatoes
  • Drizzle with some juice from the roasting tin and serve
