Method
  • Halve waterblommetjies and lightly dust with flour.
  • Heat dipping sauce ingredients in a small saucepan until sugar has melted and flavours combine, about 3-5 minutes. 
  • Pour into a small bowl and cool.
  • Mix dry batter ingredients together then add chilled soda water.
  • Whisk gently until it forms a runny, lumpy batter.
  • Heat 4cm of oil in a frying pan.
  • Dip waterblommetjies into batter, shaking to remove excess. 
  • Carefully lower into oil and fry until crispy and golden. Drain on kitchen paper.
  • Serve hot with dipping sauce.
