Grill your watermelon before slicing into cubes to add a chargrilled flavour.

Method
  • Slice medium watermelon into 3cm cubes and place on a platter. 
  • Mix a handful chopped parsley, grated zest of lemons, finely chopped garlic cloves and finely chopped green chilli together. 
  • Season with salt and pepper. 
  • Stir in olive oil and set aside to infuse for 10 minutes.
  • Drizzle parsley mixture over watermelon. 
  • Blitz milk and chopped garlic cloves together. Season with salt.
  • Add canola oil in a steady stream while stick blender is running to form an emulsion or until mixture has thickened. 
  • Serve with watermelon.
