Method
  • Cut three deep slashes into the thickest part of each chicken piece (to help flavours to penetrate and to enable faster cooking).
  • Season chicken with salt and pepper.
  • Mix the basting sauce ingredients together and pour half the mixture over chicken pieces.
  • Marinate for 30 minutes.
  • Cook chicken over medium coals, basting with remaining marinade, turning regularly until cooked through, browned and slightly charred, about 25 minutes.
  • Rest chicken for 5 minutes and serve with spring onion.

  • Make double the basting sauce, freeze, and use for beef ribs at your next braai.
