Method
  • Salad greens, for serving

Pastry:

  • Mix flour and butter together until they resemble breadcrumbs.
  • Add egg and water and mix until mixture begins to form a ball.
  • Cover and set aside for 15 minutes. Line a 25cm quiche dish or tin with pastry.
  • Blind bake for 15 minutes.

Filling:

  • Scatter beans, tomatoes, spring onions and brie over base.
  • Beat eggs, milk, sour cream, basil and seasoning together.
  • Pour mixture over pie filling and sprinkle with parmesan.
  • Bake for 30 - 40 minutes, or until set.
  • Serve warm with salad.
