Method
  • Loosen the skin over the chicken breasts, so you can fit your finger underneath easily.
  • In a bowl, mix together the rub, butter and herbs. 
  • Stuff this mixture underneath the skin, and rub any excess all over the bird (not too much, it will encourage burning so make sure most of it gets under the skin)
  • Place on a weber tray in a braai, and cover (leave air vents open if the fire is too smoky, you want a bit of flavor but nothing too over powering). 
  • Fill the tray half up with water, and place in the indirect part of the heat.
  • Cook for approximately 45 minutes to 1 hour. 
  • If the tray dries out, add another splash of boiling water.
  • Remove, carve and serve with a crisp green salad.
