Wild flower and orange fritters with dark chocolate

These fritters are best served with a cup of strong coffee, this really hits the spot.

Method
  • Place flowers in a basin of water and add a good pinch salt. 
  • Soak for a minute, then dry in a salad spinner. (This should remove any critters lurking in the petals.)
  • Mix castor sugar, cinnamon and orange peel on a plate.
  • Melt chocolate over boiling water (make sure the bowl doesn’t touch the water). 
  • Stir through cream and vanilla. Set aside and keep warm.
  • Mix flour, cornflour, peel and sugar in a bowl. 
  • Whisk in soda water to form a runny batter.
  • Heat 4cm vegetable oil in a pan.
  • Dip flowers in batter, shake off excess and fry in oil for 1-2 minutes or until golden. 
  • Drain on kitchen paper, then roll in flavoured sugar.
  • Pour chocolate sauce into small cups and serve with warm fritters.
