Method
  • Drain mushrooms and reserve liquid
  • Bring mushroom liquid, stock, salad onions, garlic, sun-dried tomatoes and chilli flakes to the boil
  • Cook over a low heat until almost no liquid remains
  • Add mushrooms and a dash of tamari and simmer for 3-4 minutes, or until mushrooms are soft and coated in sauce
  • Transfer to a blender, add cream cheese and parsley and process to desired consistency
  • Stir through lentils
  • Season well, spoon into a serving dish and refrigerate.
